Funny how these things sneak up on you, but today is officially 202nd birthday of Robert Schumann, born on June 8, 1810, in Zwickau, Germany, the youngest of five children.

"This moist, flavorful cake was the traditional birthday cake at our house when I was growing up. Everyone requested it. I especially like the sweet coconut-pecan frosting."

It's really interesting to see how much dishes can vary depending on the part of the country from which they originate. As explained on the Italian Chef Blog,

"There are several things that differentiate Lasagna Bolognese from the Southern Italian style Lasagna that is more familiar to Americans. The most noticeable differences are the use of Béchamel Sauce instead of ricotta cheese, and the absence of mozzarella–only Parmagianno-Reggiano cheese is sprinkled on each layer–which results in a more delicate lasagna."

The Sylvia in Delibes' ballet is a nymph who is fiercely loyal to Diana, the goddess of the hunt. Hence today's recipe, named after the aforementioned huntress.

In a fancy-shmancy restaurant this would be served with the fumes from the warmed brandy ignited to produce an impressive blue flame.

You don't have to indulge in the pyrotechnics, but whether or not you decide to set it off, this dish makes for a hearty and very elegant dining experience.

We wanted something special to to wrap up the Queen's Jubilee celebrations, and this should do it.

Midday Entree: Czech Pork Roast with Dumplings

The Recipe:
The secret to this recipe is the same as with any recipe: get the best stuff. As described by one native chef:

"The success of this quintessentially Czech dish depends not so much on the cook's skill as on the quality of the pork. It should be well marbled, not lean; this will result in a succulent, moist roast. The dumplings and cabbage are the perfect accompaniment, though mashed potatoes would do as a substitute. Beer is a must with this meal."

Incidentally, Dvorak's Dad was a butcher, so he'd be quite familiar with the impact quality ingredients have on the success of a meal.
