Midday Entree: Mama Beethoven's Meatloaf Surprise

OK, so maybe this isn't exactly one of Mama Beethoven's favorite recipes, but it is possible she may have served little Ludwig meatloaf once in a while. And it's a safe bet if she ever sampled this version she sure would have been surprised.

So to honor Herr Beethoven's birthday we offer this entree that is sure to delight any meat and potatoes gourmand.

Oh, and the surprise? Rolled up in the meatloaf are hashbrowned potatoes. How about that?

Midday Entree: Eve Archinal's Linzer Torte

The Recipe:
Every once in a while the recipe comes to us.

Such is the case with today's Linzer Torte, for which we can thank listener Eve Archinal, who went way above and beyond by providing not only the recipe, but the delicious demonstration of her baking prowess shown below.


Here's Eve's authentic Austrian recipe for Linzer Torte:

2 1/2 cups flour
2 cups finely chopped nuts (use any, or mix walnuts, hazelnuts, almonds or pecans)
1 1/4 cups unsalted butter
1 1/4 cups sugar
3 large eggs; reserve a little beaten egg to brush top of torte
1 teaspoon cinnamon
1/4 teaspoon cloves
1 teaspoon baking powder
1 cup raspberry jam

You'll need a 1-inch springform pan; oven preheated to 350 degrees F.

Mix dry ingredients including spices; set aside.

In a large bowl, beat butter and sugar with electric mixer. Beat in eggs one at ba time. Stir in flour and nut mixture until well blended. Dough will be soft and a little sticky. Set aside 1 cup of batter to use for lattice top.

Spread remaining batter in bottom of springform pan. Spoon raspberry jam on top and spread evenly.

On floured board, shape reserved batter into strips to cover the jam with a lattice. Brush lightly with reserved beaten egg.

Bake on center rack for 45 minutes. After torte cools, dust with powdered sugar.

For best results bake torte 2 days before serving so the flavors can blend.

Enjoy with a cup of coffee. You might want to try a dollop of whipped cream on your coffee, just like they do in Austria.

Start out with a nice butternut squash, peeled and chopped.

Add some cider, cinnamon, miscellaneous chopped vegetables and a few other choice ingredients and you've got a powerful antidote to the winter blahs.

A piping cup of wassail this time of year has a very long history indeed, going back to Beowulf and beyond.

This recipe is a good one for entertaining, because it's very easy to make, tastes great, and can simmer for hours on a stovetop or in your slow cooker throughout your holiday get togethers. In fact it actually gets better the longer it cooks.
