"One English-language menu recently spotted describes Königsberger klopse as 'a delicately simmered meat dumpling...' Fooey. Klopse translates as 'meatball,' and this is not a high-end dish.

"It doesn't need to be: with the anchovies in the meat mixture and the capers in the sauce to sharpen up the general effect, this is a tasty and satisfying meal to sit down to."

Cioppino is a fish stew of Italian origins. This west coast variant comes from Beth, who writes:

"This stew brings back childhood memories of Northern California and new buckets brimming with crab and baskets of sourdough bread.

"Rich, red, and very messy, it is now a New Year's tradition at my house. Serve in large bowls with sourdough bread on the side. Never any leftovers!"

Nicolas Flagello is a 20th century American composer, born in New York City, hence this recipe for New York Apple Bourbon cake. (Though we think some of our own fine Michigan apples would work just as well, if not better.)

This one has been floating around Leipzig since at least the 1800s and works well as either an accompaniment or main course.

Midday Entree: Creamed Chipped Beef on Toast

The Recipe:
It's a Veteran's Day tradition here at WRCJ to offer this recipe from our own Chief Engineer, who, as CPO Stephen Johnson, served aboard the USS Iowa (BB-61).


The first time we offered it, we were, much to our surprise, inundated with inquiries from veterans who actually like "S.O.S." as it's sometimes referred to in the service.

CPO Johnson’s Creamed Chipped Beef on Toast

2 tablespoons butter or margarine
1/2 cup sliced mushrooms
1 package dried beef (2.5-ounce), chopped
2 tablespoons flour
1 1/3 cups milk
1/2 teaspoon Worcestershire sauce
1 dash cayenne pepper
Buttered toast points, or English muffins


In skillet, sauté mushrooms in butter till tender. Add beef and cook until heated through.

Stir flour into mixture; add milk. Cook and stir until thickened and bubbly. Add Worcestershire sauce and pepper.

Spoon over toast.

This strikes me as sort of a fish hash, and according to the Hidden England website, Kedgeree "is a fish dish that started life in India as 'Kitchri' and was cooked with lentils and onions. It was brought back to England in the 1700s and adapted to our palette."
